Meat is an important protein source, being an essential nutrient needed by the body, Protein deficiency in the body can lead to malnutrition, Although meat is important, it is also necessary to conduct studies to identify its contents of pollutants, whether microbial or chemical, to ensure the safety of public health. Food-borne diseases are a major health problem that not only faces the patient at risk, but also doctors, epidemiologists, food inspectors and microbiologists in laboratories. Researchers studied the quality of Mustadella beef imported roll by collecting ten samples from local markets in Baghdad city and analyzed them microbiology, They found that levels of the total number of aerobic bacteria of the roll samples of Matradilla beef imported between (1 \u00d7 102 to 2.5 \u00d7 106) colony formation unit\/g while total colon bacteria counting level in study samples (1 \u00d7 101-5 \u00d7 104) (colony formation unit\/g), and levels of preparation of Staphylococus sp bacteria ranged (1 \u00d7 101 – 2.4 \u00d7 103) (Colony Formation Unit\/g), and some study samples ranged in total yeast count and amnesty (1 \u00d7 102 – 2.5 \u00d7 103) (colony formation unit\/g) and with \u0645\u0639\u0646\u0648\u064a\u0629P\u22640.05 differences, all study samples of Salmonella spp and Escherichia coli O104:H4, The results of the study showed the presence of lead metals Pb and cadmium Cd in all samples of the tested study and in varying concentrations, The highest concentration of lead component is 0.0624 mg\/kg and its lowest concentration is 0.0371 mg\/kg and with P\u22640.05 moral differences, The lowest concentration of the cadmium component was 0.0102 mg\/kg and the highest concentration of the same element was 0.0189 mg\/kg.<\/h4>\n","protected":false},"excerpt":{"rendered":"
